Genevieve's Pink Milkshake

I've been trying to encourage my 3-year old daughter Genevieve to try new fruits and vegetables. Like most toddlers, she's a little skeptical! We receive an organic produce box every week and Genevieve likes to help me unpack the box. We talk about all of the fruits and veggies and how delicious they are! This week I pulled out an adorable bag of tiny Meyer lemons and Genevieve decided she wanted to use them to make a pink lemonade milkshake. I think it turned out pretty great! It's creamy from the frozen banana and coconut milk and has a hint of tartness from the Meyer lemons and berries. Toddler approved! 

Genevieve's Pink Milkshake 

Makes 3-4 toddler or 1-2 adult servings

Ingredients: 

1 frozen banana

1 heaping cup of frozen berries (we used a blend of strawberries and cherries)

1 cup of full fat coconut milk

2 Tbs of Meyer lemon juice (you could substitute any citrus juice)

Directions: 

Add coconut milk, lemon juice, berries and banana to a high speed blender and blend on high for 60 seconds or until smooth and creamy. If your berries are very tart you may want to add a tablespoon of honey or maple syrup to your shake. Enjoy!
