Ginger Glazed Chicken

I'm always trying to think of new ways to make chicken. My husband loves roasted chicken and my little girls like eating chicken legs. My usual go-to is olive oil, lemon, herbs, salt and pepper but that felt a little boring this time. I was in the mood for something a little sweet and sticky and this Ginger Glazed Chicken fit the bill. I served it with Ginger Miso Golden Beet and Fennel Salad and steamed broccoli and it was divine! 

Ginger Glazed Chicken

Serves 4-6

Ingredients:

4 bone-in chicken thighs with skin

4-5 chicken drumsticks

Sauce:

1/2 cup of gluten free low sodium tamari 

1/3 cup of coconut sugar

1/4 cup of extra virgin olive oil

1/4 cup of filtered water

1 inch piece of ginger root, peeled and diced

1 clove of garlic, diced

1 Tbs of coconut or rice vinegar 

1 Tbs of gluten free Asian hot sauce 

1/4 tsp of toasted sesame oil 

Directions:

Preheat the oven to 375 degrees F. 

Place chicken thighs and drumsticks in a 9X13 inch baking pan. In a small bowl, combine all of the sauce ingredients and whisk together. Pour the sauce over the chicken and bake for 45 minutes. Bake another 10-15 minutes, spooning the pan sauce over the chicken every 5 minutes. This will result in a sweet, sticky glaze on the chicken. Serve with a spoonful of the sauce. The chicken would be delicious with rice or cauliflower "rice" as well. 

Note: If you would like to thicken the pan sauce, pour it into a sauce pan and add a mixture of 2 Tbs of corn starch mixed with 1/4 cup of water. Simmer until bubbly and thick.
