Sugar Bunny Flour Blend

This is my go-to blend that I developed after a lot of experimentation. I've found that many cup 4 cup gluten free flour blends are starch heavy and don't use very nutritious flours. It's important in a gluten free blend to use a mix of heavier and lighter flours and some kind of starch. I prefer arrowroot starch over potato starch or tapioca starch for most recipes. We used the Sugar Bunny Blend for all of our farmer's market recipes and they always turned out great. I prefer to add xanthan gum to individual recipes instead of to the flour blend. 

Sugar Bunny Flour Blend

Makes 8 cups

Ingredients: 

2 cups of gluten free oat flour (substitute quinoa flour or buckwheat flour for an "earthier" taste)

2 cups of gluten free white rice flour

2 cups of gluten free brown rice flour

2 cups of arrowroot starch 

Mix together in a large mixing bowl and transfer to an airtight container.
