Sweet Potato "Crostini" with Sweet and Savory Toppings (gluten free, paleo, vegan optional)
I'm always looking for quick appetizers to throw together for entertaining. Most appetizers are filled with gluten and dairy because those things are delicious! These little sweet potato crostini have lots of flavor and none of the bad stuff. I used goat cheese but you can also use a cashew cream, vegan cream cheese or mashed avocado. They are amazing with both sweet and savory toppings. I've made them for brunch and for a Christmas party appetizer.
White sweet potatoes actually have a much milder taste than orange sweet potatoes. I like using the white sweet potatoes with toppings like smoked salmon. The orange sweet potatoes taste great with the sweet toppings or with avocado and bacon.

Sweet Potato Crostini with Sweet and Savory Toppings
1-2 large white sweet potatoes, peeled
1-2 large jewel yams, peeled
1 Tbs of extra virgin olive oil or melted coconut oil
dash of sea salt
goat cheese, thinly sliced cucumber, sliced cherry tomatoes, smoked salmon, cooked bacon, sliced avocado, fresh basil, sprouts, dried cherries or cranberries, toasted walnuts, honey, etc.
Preheat the oven to 400 degrees F. I used the convection roast to save time.
Slice the sweet potatoes horizontally into 1/4 - 1/2 inch slices. Toss with the oil and sprinkle with sea salt. Place in a single layer on a baking sheet and roast for about 20 minutes, flipping halfway through. The thicker you slice the rounds the longer they will take to bake. You want the sweet potatoes to be cooked through but not mushy.
When the sweet potato "crostini" are slightly cooled add a dollop or smear of goat cheese, vegan cheese or mashed avocado. Add the remaining toppings.
White Sweet Potato:
goat cheese, sliced cucumber, smoked salmon
goat cheese, fresh basil leaf, sliced cherry tomatoes, sprinkle of sea salt and pepper
goat cheese or avocado, sliced cucumber, sliced cherry tomatoes, sprouts, sprinkle of sea salt and pepper, squeeze of lemon
Orange Sweet Potato:
goat cheese, dried cherries, drizzle of honey, toasted walnuts, sprinkle of sea salt
smashed avocado, sprinkle of sea salt and pepper, chopped bacon, green onion
goat brie, fig preserves, sprinkle of sea salt
